Simple Cooking Instructions (Serves 2-3):

Heat a pan and stir-fry the Lobo paste with 1 cup (240ml) of coconut milk until the yellow oil separates and it smells fragrant.

Add 250g of chicken (drumsticks or thighs work best) and stir to coat.

Add 1 cup of water and cubed potatoes and onions.

Simmer until the chicken is cooked through and the potatoes are soft.

Serve with Jasmine Rice or Roti bread.
